Jalepeno Corn Bread


You will need:

1 ½ Cups self rising meal
¼ Cup self-rising flour
1 Cup buttermilk
2 eggs
½ Cup vegetable oil
1 med onion diced
1 ½ Tblsp jalapeño juice
2 Cups Monterrey Jack shredded
1 15-16 oz can shoepeg corn
½ Cup packed diced jalapeños

To Make:

Oven 375

Combine all ingredients in a large mixing bowl except 1 cup of cheese. Heat cast iron skillet in oven with 2-3 Tblsp oil and coat well. Pour in mixture and bake about 40 minutes. Pull our and top with cheese. Put back in oven to melt cheese well. Garnish with Jalapeño slices or green onion.

Good hot or cold. (It’s hot either way!) You might want ice cream for dessert.

Cut back the amount of jalapenos to a third of a cup if you want a bit less of a spicy bite. Using the ½ cup as indicated is enough for it to register as having some heat while not being overly spicy as to kill the flavor.
